Brodetto alla cervese (fish soup)

Ingredients


To serve 6:

  • 1 kg of assorted seafood (scorpion-fish, prawns, cuttle-fish, squills, mullets)
  • 1 onion
  • parsley
  • half a glass of white wine
  • 8 peeled tomatoes
  • concentrate tomato sauce
  • garlic
  • fried bread

 

Method

Clean and chop the fish. Make a tasty soup with the heads.
Brown the onion, the garlic and the chopped parsley. Add white wine and let it evaporate.
Add the peeled tomatoes, the concentrate tomato sauce and the fish soup, the chopped cuttle fish, salt and pepper and let it boil for 30 minutes.
Add the remaining fish in the following order: scorpion fish, squills and mullets. Serve the brodetto in small pots with fried bread.
