Chicken with sweet Cervia salt
Ingredients

Baby chicken

2 kg of Cervia sweet salt

200 g egg white
-
a sprig of rosemary
-
1-2 sage leaves

1 clove of garlic
-
lemon
-
salt
-
pepper
Preparation
Place all the flavourings in the cleaned and flamed chicken belly, season with salt and prepare moderately.
Mix Cervia salt with egg white.
In a baking tray with a sheet of baking paper, create a base the size of the chicken with the mixture, place the chicken on top from the back and cover it well.
Bake in a preheated mixed oven at 170° for 60 minutes.
Remove the salt crust, divide into quarters or eighths and serve.
