Roastbeef with Cervia salt

Ingredients

  • 5 bay leaves
  • 2 sprigs of rosemary
  • 2 sprigs of thyme
  • 1 kg roast beef
  • 2 kg coarse Cervia salt

 

Preparation

Roast beef is ideal for a tasty and succulent roast without any added fat.

Cooking with Cervia salt allows the meat to retain its moisture and most of its juices while the sweet salt provides the right balance that enriches the flavour; the salt cover also allows the heat to penetrate the inside of the roast very evenly without burning the outside.

Heat the oven to a high temperature. Place the roast beef with bay leaf, rosemary and thyme in a container and lay it on a bed of Cervia salt; cover entirely with salt.

Baking will take 20-25 minutes depending on taste.
