Blackthorn and Salina di Cervia blackthorn jam
Prugnolo is born and grows along the banks of the Salina di Cervia canal, producing small plum-coloured drupes.
These fruits are sour when raw, but the same cannot be said of blackthorn liqueur or jam.
The blackthorn yields a jam that is sweet enough to enrich tarts or filled biscuits.
For the more refined, it is even paired with an omelette.
The blackthorn is also used to produce a liqueur made from alcohol, sugar and blackthorn.
Great to enjoy at the end of lunch, chilled or on cream ice cream.
